Our family always served sweet potatoes on Thanksgiving and Christmas. As kids we all loved our sweet potatoes. My mother cooked them a dozen different ways. We loved Cinnamon sticks and orange marmalade. So, here is one of our favorite sweet potatoes receipes:4 sweet potatoes,peeled and thinly sliced.2/3 cup sugar2 Tbsp. orange marmalade3 Tbsp. unsalted butter1/2 cup water1 tbsp. cinnamonstep 1. Preheat oven to 350 degrees F. Butter a round dish or 8x8 inch baking pan. Overlap potatoes in pan. Set aside.step 2. Combine sugar, marmalade, butter, water and cinnamon in a small saucepan, Bring to a boil and boil for about 5 minutes, stirring often.step 3. Pour cinnamon mixture over sweet potatoes. Cover with foil and bake for about an hour. Remove foil and cook for another 30 minutes or so.step 4. ENJOY Pat.EarthLink Revolves Around You.
